Refinement.

Maestro, indeed.  Wisdom every minute ...
Question, question, question. Taste, taste, taste. Think, think, think. That's what cooking is all about. Is that where you can take it? Because I'm a classicist. I'm not a fantasist. I believe in those great classic marriages. Basel and tomato, madera and mushroom, red wine and shellots. Keep it simple. We live in a world of refinement, not invention. It's as simple as that. And never forget. If you want to stray and do bizarre and peculiar combinations, then good luck.
