Entirely.

I’m too lazy to go to places and look around and see what real places are like, so I prefer to sit at home at my desk and make them up. I didn’t go to the Arctic to write Northern Lights, I went to the Bodleian Library instead. Which proved entirely satisfactory.

Environment.

The most important aspect of any restaurant is the environment we sit in, not what’s on the plate. When I go home, my favourite supper is a ham sandwich with pickled onion and a cup of tea. I’m that simple. But when it comes to having dinner, it’s about sitting with people I love.
