Zanzarelli.


Zanzarelli in Beef Broth
4 servings

Ingredients
4 cups beef broth 
½ cup grated Grana Padano, DOP
2/3 cup bread crumbs
4 eggs
pinch saffron
nutmeg, to taste
salt and pepper, to taste

Instructions
  1. Bring the broth to a boil, and then add the packet of saffron
  2. Mix the eggs with the cheese and bread crumbs, form small balls and drop them into the broth 
  3. Stir
  4. Cook zanzarelli until firm
  5. Distribute the broth with zanzarelli into bowls
  6. Add salt and pepper, freshly grated nutmeg
  7. Serve
  8. Repeat as needed
